Simple & Quick Macadamia Nut Cookies (Vegan & Allergy-Friendly)

Either way, this allergy-friendly, fully vegan dessert is exactly what you’ve been dreaming of. These cookies aren’t overly sweet, but they’re flavorful enough to feel special—especially during the holiday season. After all, how often do you get to bake with macadamia nuts?

This recipe also features some of our favorite better-for-you baking ingredients, like coconut sugar, coconut oil, and gluten-free flour. The cookies keep well for up to a week in the fridge, or five days at room temperature—perfect for prepping ahead.

Ingredients

  • 1 cup coconut sugar

  • ¾ cup coconut oil, softened

  • ½ cup unsweetened applesauce

  • 2 tsp pure vanilla extract

  • 1¾ cups gluten-free 1:1 baking flour (or all-purpose flour)

  • 2 Tbsp unsweetened non-dairy milk (as needed)

  • ½ cup raw macadamia nuts, halved or chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and position a rack in the center. Line a large baking sheet (at least 17 x 14 inches) with parchment paper. Alternatively, use two medium-sized sheets and bake in batches.

  2. In a large bowl, use a handheld mixer or whisk to cream together the coconut sugar, softened coconut oil, applesauce, and vanilla until smooth and creamy.

  3. Gradually add the flour and mix until a thick, sticky dough forms. If the dough feels too dry or crumbly, stir in 1–2 tablespoons of non-dairy milk. Fold in the chopped macadamia nuts.

  4. Scoop out the dough by tablespoons and roll into 24 small balls. Place them on the prepared baking sheet, spaced about 2 inches apart. Gently flatten each cookie with the back of a spoon.

  5. Bake for 10–12 minutes, or until the cookies are lightly golden and slightly spread out.

  6. Let the cookies cool completely on the baking sheet before removing. Store in an airtight container for up to 5 days at room temperature or 1 week in the refrigerator.
