1. French-Style Breaded Steak

Ingredients

  • Main: 500 g (about 1.1 lb) steak

  • Others: 150 g (about 3 large) eggs, 150 g (about 5 oz) white bread, 50 g (about ⅓ cup) flour

  • Seasonings: 4 g (about ¾ tsp) salt, 3 g (about ½ tsp) black pepper

Instructions

  1. Beat the eggs in a bowl. Remove crusts from the bread, cut into small cubes, and season with 1 g salt.

  2. Slice steak into portions, pound with the flat side of a knife to tenderize, and season with salt and pepper. Dredge in flour, dip in egg, then coat with bread cubes. Place a sheet of parchment on top and press gently so the coating sticks.

  3. Heat 250 g (about 1 cup) of vegetable oil in a baking pan to about 200°C (400°F). Pan-fry the steak for about 5 minutes, flip, and cook another 10 minutes until golden brown.

Ingredients

  • 100 g (about 3.5 oz) lean beef steak

  • 2 g (about ⅓ tsp) salt

  • 50 g (about 3 tbsp) mustard oil

Instructions

  1. Roast the steak in a preheated oven at 100°C (210°F) for 5 minutes, flip, and cook 1 minute more.

  2. Heat a griddle with a little vegetable oil and sear the steak over high heat until browned on the outside.

3. Home-Style Steak

Ingredients

  • 200 g (about 7 oz) beef tenderloin

  • 2 g (about ⅓ tsp) salt

  • Black pepper to taste

Instructions

  1. Pound the beef with a meat mallet.

  2. Marinate with red wine, salt, and a pinch of baking soda for 2 hours.

  3. Heat butter on an electric griddle (200°C / 390°F) and sear the steak. Cooking time will depend on your preferred doneness.

Instructions

  • Lean beef steak, sliced not too thick

  • Salt, pepper, olive oil

Instructions

  1. Pound the steak with the back of a knife or rolling pin.

  2. Marinate with cornstarch, egg white, wine, chicken bouillon, and five-spice seasoning for 20 minutes.

  3. Heat olive oil in a skillet until smoking. Carefully place steaks in the pan and quickly sear both sides and edges to seal in juices.

  4. Cook each side for about 5 minutes. When pierced with a fork, the juices should run clear.
